“Every day we’re still learning. We’re not perfect, but we’re trying to get there,” says Cosmo Kwon, Co-Owner of Hinode in Nixa, Mo. Kwon says there is a huge difference in purchasing an existing business and building one from the ground up. This was the first restaurant the ownership group took from concept to completion and they learned much in the process. Kwon likens the experience to learning to being a parent with multiple children.
