“One big thing we tried to do was to make it more casual — into a fun family dining experience that everyone could enjoy,” says Cosmo Kwon, Co-Owner of Hinode in Nixa, Mo. The change worked. Kwon says since 2005, their sales numbers never dropped, even during the recession. They’ve grown to more than three times the employees in the Springfield location alone. “We want to be part of a community that will love us being here and at the same time, we can make a big impact on their community as well,” says Kwon.
