“We’re doing really complicated math, forecasting way in the spring, what we’re gonna need in inventory by what date,” says Shawn Askinosie, the Founder and CEO of Askinosie Chocolate. The company has only production line, which means it’s critical to monitor what products are selling. “It’s complicated in one sense because of the fact that we don’t have multiple production lines. But it’s also sort of logical in the sense that, ‘oh, you mean you make what people are buying?’ Yes, and we let that guide how we control inventory,” Askinosie says.
