Owners Focus On Fresh, Local

Posted online

Consumer demand for locally sourced food has skyrocketed in the last few years and according to the National Restaurant Association, 68% of consumers say they’re more likely to visit a restaurant that serves locally sourced items than one that doesn’t.

Farmers Gastropub owners Andy and Misty Hampshire are dedicated to providing as much locally sourced food as possible, with the majority of their ingredients sourced from more than 25 farms all within a 50-mile radius of Springfield.

The Hampshires bought the Gastropub in November of 2015 and say they enjoy serving people who appreciate knowing where their food comes from.

“We want to bring the best fresh, local products because the fresher the food, the better it tastes. And it’s the right thing to do—for our health, for the economy, for our neighbors and community. We want to invest in resources as close to home as possible,” says Misty Hampshire.

The restaurant serves fresh, local American flavors with a British twist in the atmosphere of a friendly neighborhood pub. While they serve plenty of traditional British dishes like fish and chips they do offer more adventurous fare like pig ear tacos. The Gastropub also offers 25 beers on tap, featuring mostly craft brews, another growing trend in the restaurant industry.

The Hampshires have added full-service catering and private parties.  The entire restaurant may be booked with a seating capacity of 127 or standing capacity of 140, or there is a smaller private dining/meeting room that can hold up to 40.

In addition to locally sourced fresh ingredients, all sauces and house pickles are made from scratch. They cut the chips, smoke the trout, and grow a variety of fresh vegetables and herbs right in the pub.

With sustainability being key, Farmers Gastropub recycles everything possible, buys locally when possible, and filters the restaurant’s water on-site. Many local artisans, craftspeople, and vendors were hired to get the “Olde” English pub look for the Brentwood Center spot.
