Curtis Millsap, owner of Millsap Farms, says they started out growing produce on a half acre of land. When they turned a profit, they decided to scale their production up to seven acres. “Anybody who’s ever had a business and grown it will tell you, what you do at this scale versus seven times this scale is a very different thing, but we didn’t know that and didn’t really think it through,” Millsap says. That decision caused rapid growth and left the farm floundering for two years. They eventually downsized production to a more manageable level. Millsap says your labor, land, water and finances must be matched evenly. Don’t let your reach exceed your grasp.
