Food truck Chameleon Cuisine LLC expanded June 11 with a brick-and-mortar restaurant at 400 E. Walnut St., the former site of Aviary Cafe and Creperie LLC. Husband-and-wife owners Yoni and Alana Vargas have run the Chameleon Cuisine mobile eatery in Springfield since March 2020. They signed a two-year lease with The Big Ugly Building Co. for roughly 1,400 square feet, said Alana Vargas, who declined to disclose the rate or infill costs. She said the winter months proved to be a challenge to maintain sales volumes out of a food truck, which led to launching the downtown eatery. She said eight employees work between the restaurant and food truck. The menu includes tacos, burgers and a mix of seasonal offerings. Prices range $6-$15.50, she said. Chameleon Cuisine first opened in 2017 in San Diego, Vargas said. She and Yoni moved to Springfield last year so she could attend graduate school at Missouri State University.

Rolla-based Investment Realty Inc. put down roots in the local market June 1 with a branch at 3250 E. Battlefield Road, Ste. Q, in Fox Grape Plaza. The nearly 40-year-old property management company signed a two-year lease for undisclosed terms to occupy 1,500 square feet, said owner and President Mike Woessner. The contract includes options for lease extensions. “The Springfield-Branson area, just from the sheer size of it, was interesting,” Woessner said of expanding into the market. Founded in 1984 by Woessner, Investment Realty’s portfolio comprises more than 3,000 single and multifamily residential units, as well as commercial and farm properties. The two-employee office in Springfield is led by Shane Crawford, who relocated from Rolla, Woessner said. The company expanded to St. Robert in 2013 to serve the Fort Leonard Wood community.

Seven Arrows Taproom
Husband-and-wife owners Tom and Heather Sattazahn launched Seven Arrows Taproom on April 9 at 260 Birdcage Walk in Hollister. The bar has roughly 2,500 square feet, including a 1,500-square-foot outdoor beer garden. Heather Sattazahn said the four-employee venture has 24 taps, largely dedicated to craft beer from Missouri and Arkansas, such as Springfield’s Mother’s Brewing Co. and Great Escape Beer Works, and Rogers, Arkansas-based Ozark Beer Co. The space formerly was occupied by coffee shop Vintage Paris, which moved last year. Sattazahn said her husband, who is a general contractor and owner of Master Handyman LLC, handled the 117-year-old building’s remodel after the couple bought it from Michael and Kelly Klemm in November 2020. The work included new flooring, plumbing and electrical systems, she said, declining to disclose startup costs. Sattazahn said the taproom’s name is inspired by the couple’s blended family, which includes seven children.
